What you will need: mustard seeds, mustard powder, cider vinegar, assorted spices, 2 8-oz jars, jar labels, recipes

Sweet & Spicy Beer Mustard
¼ cup mustard seeds coarsely ground
¼ cup mustard powder
3 tbsp cider vinegar
1 tbsp honey
¼ cup beer, any style
1 tbsp cold water
¼ cup brown sugar
pinch of ground cinnamon & clove
¼ tsp garlic powder

Grind or crush your mustard seeds coarsely. Combine the mustard powder, mustard seeds, and water together and let stand for 10 minutes. Add the remaining ingredients and mix well.Transfer to a clean jar, cover tightly, and refrigerate. Your mustard will taste best after sitting for up to a week.

Tangy Horseradish Mustard
¼ cup dry mustard powder
pinch of black pepper
2 tbsp cold water
½ tsp salt and ½ tsp brown sugar
½ clove of garlic
¼ cup cider vinegar
1 tbsp horseradish, fresh grated or prepared

Combine mustard, pepper, and water in bowl.  Put salt, sugar, garlic, and horseradish in a blender or food processor and blend for 1-2 minutes.  Strain into the mustard mixture.  Empty mixture into a saucepan and simmer over low heat, stirring constantly until slightly thickened.  When cool, stir about 1 tsp extra horseradish to give your mustard texture.  If your mustard is too thick you may thin it with additional water or vinegar.
